Pignut, Conopodium majus

The pignut is a small woodland native, that I have seen quite frequently in our local woodlands around Forest Row, Sussex.

The tubers can be eaten raw or cooked. A very pleasant food with a flavour somewhat between a sweet potato and hazelnut.

There is only one tuber on each plant, this is rather small and difficult to harvest, but the size could probably be increased by cultivation.
